It's pretty amazing how they do this.  Basically, they are hooking an input (keyboard, guitar, midi player, whatever) to a light modulator that sends light pulses to the coil at the frequency of the note that is desired.  The light signal is received at a "switch" that turns the coil on and off at that frequency.  IE: If you play the note that exists at 100hz, the coil turns on and off 100 times a second.  By doing this, they are modulating the frequency of the coil bursts, which controls the tone of the sound you hear instead of just a lot of loud snapping and popping.
